- 3 cups all-purpose flour
- 1 1/2 tablespoon baking powder
- 1 teaspoon kosher salt
- 3 eggs
- 2 1/2 cups milk
- 2 teaspoons vanilla
- 1/4 cup maple syrup
- 1/4 cup butter, melted
- Optional toppings:
- 1 banana, sliced
- 1/2 cup blueberries
- 1/4 cup chocolate chips
- 1/2 cup strawberries
- 1/2 cup rasperries
Sheet Pan Pancake Recipe Steps
Preheat oven to 425 degrees. Whisk together the flour, baking powder and salt in a large mixing bowl. In a smaller mixing bowl, add the eggs and beat them with a whisk. Very slowly add some melted butter to the eggs and whisk, making sure the eggs are not cooking due to the warmed butter. Then whisk in the rest of the butter, milk, vanilla and maple syrup. Take your combined wet ingredients and slowly mix them into the dry ingredients with a spoon (not a whisk). Be careful not to overmix – it’s ok if the pancake batter has small lumps.
Generously spray your sheet pan with cooking spray or grease it with vegetable oil. Pour the pancake batter onto the middle of the sheet pan and smooth it out with a spatula or spoon until the batter is even. Try to make sure the batter goes to each corner, and smooth out any large air bubbles.

Bake for 15-20 minutes, or until golden brown. Mine took about 18 minutes, but ovens vary. Let it rest for about 5 minutes and then cut into pieces using a silicone turner. Serve warm with butter and syrup or top with whipped cream. You can also cut them into pieces and freeze to eat later. Take one out of the freezer the night before to defrost. In the morning, pop it in the toaster for a couple of minutes to heat it up.
