Easy Pork Chops Recipe Ingredients:
- 1 lbs Brussels sprouts, halved
- 2 Gala apples, cored and sliced about ¼ inch thick
- 3 tbsp. olive oil
- 2 tbsp. cider vinegar
- 1 tbsp. brown sugar
- 4 small bone-in pork chops (1 inch thick, about 2 lbs. total) – we used 2 large pork chops instead
- Kosher salt and pepper
- Spice mix
Easy Pork Chops Spice Mix Ingredients:
- 1 tsp. chili powder
- ¼ tsp. cayenne pepper
- ¼ tsp. garlic powder
- ¼ tsp. smoked paprika
- ¼ tsp. ground mustard
- ¼ tsp. salt
- ¼ tsp. pepper
Easy Pork Chops Recipe Directions:
Heat oven to 425 F degrees. Place the halved Brussels sprouts and apples in a medium bowl. Pour on 2 tbsp. of olive oil and mix together, then add the cider vinegar and brown sugar and mix. Finally, add salt and pepper to taste and mix. Spread out the apples and Brussels sprouts on a large rimmed baking sheet. Roast in the oven until golden brown, about 18 minutes, tossing once halfway through.
In the meantime, create the spice mix for the pork chops. Combine all the ingredients – chili powder, cayenne, garlic, paprika, mustard, salt and pepper – in a small bowl. Season all sides of the pork chops with the spice mix.
Heat a large cast iron skillet over medium high heat, and add the remaining olive oil (1 tbsp.) to the pan. Add pork chops and cook for 4-5 minutes on each side, until each side has a nice deep brown color. Use an instant read thermometer to make sure the pork is cooked to at least 145 degrees in the center. Remove the pork from heat and let rest for 5 minutes, then serve with the apples and Brussels sprouts.
